These poppable appetizers are a quirky, innovative take on a typical soup-and-sandwich combo. Instead of eating your cup of soup with half a sammie on the side, why not roll them together into one clever dish?

We’ve done it before for a twist on grilled cheese and tomato, and now we’re back to try it again. This time, we’re adding a little Tex-Mex flavor!

Taking inspiration from classic Chinese soup dumplings, the outside of these dumplings are a solid shell containing a liquid center of soup, which you can carefully slurp out for a very satisfying flavor combination.

You get the soup inside the shell by freezing it first, then frying up the exterior so that the soup melts inside. The end result is one of the most delicious treats we’ve ever had the pleasure of trying.

Ingredients


  • 1 can

    condensed tortilla soup

  • 12 cup

    cheese of your choosing

  • 1 bag

    tortilla chips

  • 1 cup

    cornmeal

  • 1 tsp.

    salt

  • 12 tsp.

    pepper

  • 2 loaves

    sliced white bread

  • 2 cups

    milk

  • 4

    large eggs

  • 2 quarts

    vegetable oil
  • Smoked paprika, to garnish
  • Shredded chives, to garnish

Instructions

  • Grate cheese into soup. Heat and mix until melted.
  • Evenly distribute soup into ice cube tray. Freeze overnight.
  • Finely crush tortilla chips until they are well ground.
  • Combine tortilla crumbs in mixing bowl with cornmeal, salt, and pepper. Whisk together well.
  • Cut crust off each slice of bread and roll out flat with rolling pin.
  • Place each frozen soup cube in the middle of a slice of bread. Fold the bread around it.
  • Brush bread with milk, and roll into a tightly sealed ball around frozen soup cube.
  • Whisk eggs into egg wash, then dunk each bread ball in egg before rolling in crumbled chip mixture.
  • Fry in hot oil six to eight minutes, or until golden brown.
  • Sprinkle with paprika and chives. Serve hot and enjoy!
